A few ideas
Antigua. The Mystic Catamaran with lobster lunch. Usually offered through RC. Check trip advisor for the best reviews I've ever seen.
Barbados. If you just want a beach day...Boatyard is great. $5 cab ride a few minutes away. Think $20/person includes chair & shared umbrella, 1 cocktail and return transportation to ship. They have a restaurant, music, restrooms, water trampoline, rope swing, etc. lots of fun.
Otherwise the Tiami Catamaran is awesome. Do the one that includes lunch. So fun
St Lucia. I found Joys Adventures on Trip Advisor. People rave about it. About $100. Boat ride, mud baths, waterfall, snorkeling and a traditional St Lucian picnic at the owners home.

Who have you used for a Catamaran only excursion. Am not looking for a land portion. Thanks.

We were in Antigua last week and did a DIY excursion to Darkwood Beach. It's about 30 minutes from St. John cruise terminal. We took a taxi and it was $8/pp one way. There is also a bus that is $1-2 per person. We arrived at about 11am and stayed for about 4 hours. They offer 2 lounge chairs and a bucket of Carib beer for $25. There is a small restaurant with a variety of choices and reasonable prices. There are changing rooms and restrooms. The beach is well groomed, few waves, and a nice slope into the clear, blue water. If we're ever in Antigua again, we'd visit Darkwood Beach. Enjoy your time there!
The last time I was in Antigua we went to Valley Church Beach. It was beautiful but getting out of the water was tough because a lot of the beach was eroded and it was super mushy sand trying to get out. Is it like that there? I have a torn meniscus and struggle with stability in mush like that.

A few questions?
Heard some people were boarding as early as 11. Anyone know if that's possible?
Also we have late dining. Does the muster drill interfere with that?
