  1. Take a taxi to the Mayan Princess Hotel. The beach is nice, and you can hire a little boat with a guide to take you a little ways to the reef. At the hotel you can use changing and restroom facilities, and beach chairs, snacks, and other beach activities are available.

  2. We always take a taxi to Smith Cove, about 1 mile from the pier. The taxi driver will leave you there and return at whatever time you arrange. There is a very nice reef and small sandy beach. Walk out into the water, the fish are right there. You will find a small bathhouse and picnic tables, but no food or drinks are available. If you really want a great snorkeling tour, hire Captain Marvin. He will take you a a great coral reef and Sting Ray City. You can even purchase a DVD of your trip, and you are the star!

    10 oz bittersweet or semisweet chocolate,chopped

    4 Tablespoons unsalted butter

    5 eggs

    1/2 cup sugar

    3/4 cups all purpose flour

    1 & 1/2 teaspoons baking powder

    1/8 teaspoon salt

    caramel sauce, optional

    vanilla ice cream

     

    Heat oven to 325. Lightly coat a 12 cup muffin tin with vegetable spray.

     

    Melt the chocolate and butter in a large bowl over a saucepan of simmering water. Remove from heat. In another bowl, beat the eggs and sugar at medium-high speed until light and fluffy. Add the flour, baking powder, salt and melted chocolate. Mix with a spoon until well blended.

     

    Divide the batter into 8 muffin tins and bake until the cakes have baked through, about 15 minutes. The cakes will still look a bit moist on top. Remove from oven and let cool 15 minutes. Serve warm with caramel sauce and ice cream.
