Sometimes he plays in the dining room. Other times he plays in the bar on the 4th floor right before you walk into the Casino Royale from the dining room. He plays a 12-string accoustic, and plays a great Stairway to Heaven.

I think his name is Pedro Dela Llana (had to reach back to our review of Liberty from 2008 to remember). He played Bohemian Rhapsody in the dining room one night which was a huge hit.
