You can try and contact Carnival to see if there will be a Latin Band on board when you sail - sorry, you don't say when you are going.. it's difficult to answer without your dates.

The bands vary on the ships. For the most part, I have not experienced a latin band but have found caribbean music more prominent on the deck. I do know if you tip, some bands or piano players will take request. I have sailed the Freedom so let me know if you need any more help.

There has been as shift from having jazz bands on board to having groups that do salsa but not on the open decks. Typically, you'll find them in the port side lounge aft on the Promenade Deck. On the Freedom the lounge is called the Swingtime Bar...
