Your husband would be more than appropriately dressed if he wore a pair of "Dockers" or dress slacks and either a polo type shirt or a button down shirt. There is no need for a tux, suit, sport coat, or tie. At one point I would have expected to see 70% of the men in suits or tuxes on "formal" nights during our cruises. On our last cruise, which was over Christmas, I would guess the tux/suit percentage to be less than 10%. I would not avoid the MDR because your husband does not want to wear a suit. If you are still unsure - I have a sneaky suggestion: walk past the entrance to the MDR about 10 minutes before the doors open for seating - this way you will see exactly what the majority of the men are wearing.
