For universal reasons, like airplanes, The ships mainly go by GMT time.

 

It's best to ensure that you check the timezone that you are in when you first begin your cruise, and ensure that each port of call is in the same time zone. (or adjust as needed) Also account for Daylight savings time if needed. I'm not 100% sure who observes DST and who doesn't
