We are cruising on the Summit in November from San Juan,PR and I am trying to decide when to book at Normandie but I'd like to not do it on a Formal night in the MDR. :)FYI this would be surprise for my husband in addition to the CC room I've booked and I just want to make the entire experience special. Any suggestions would be greatly appreciated.

When there are 2 or more formal nights two of them are almost always on the second and second to last night on the ship. The only exception is if these are port days AND a day later or earlier is a sea day that would work out much better. Even then they usually stick with these nights. Likewise the first and the last night on the ship are never formal nights.
