I recall that there were specific items on the menu every night identified as gluten-free.

...and have sailed with CCL twice with no issues.

 

You can have it marked on your booking.

 

On day one, head to the dining room and give them your sign and sail card which has your table number on it, and speak with the Maître'd. Every night someone will come and take your order for the next night. My wife liked it bc she would get a preview of the next days menu.

 

They can also make GF Chocolate melting cake that is just as good as the original.
