Dream question

Morning!! So, I'm riiiiight about to book the Feb.8th 7day Eastern on the Dream and was speaking to someone from Carnival and she advised me that I should really consider another date because the ship seems really full. She said, " I don't know if it's the Super Bowl or something but I'd book on another sailing!" After we hung up I realized we'd be gone on Valentines day! Duh! I kind of like that idea even more. I've been on about a dozen cruises and I'm sure there's been a few that were full... I just never asked/was told. So, my question is...is it really THAT big of a deal? I'm aware that lines might be a little longer but is there anything else I might be overlooking? What's it like being on a sold out ship that is as big as the Dream?
