We are waiting on passports, can I still check in as birth certificates and then change it later when we get passports? (praying everything gets here, right now I have neither!!, 47 days to cruise)

If I don't check in, will I be able to register for entertainment when it comes up?

 

Any advice?

You can sign up dining and whatnot without having checked in. I don't recall a way to edit or re-do the online check in process so I would wait until your PPs arrive.

You can do an online check-in with birth certs and change it later. I clicked on Online check in this morning having had already checked in months ago and it allowed me to change anything I wanted for any passenger.

Yes as other said you can check in now and edit later or don't and do it at the port (will take a little longer). Also, you can order gifts excursions even if you didn't check in.
