booking excursions for dawn on ship

i know a lot of people try to book the excursions ahead of time. will we have a problem booking on the ship, or do things tend to fill up before anyone gets on the ship. we are specifically interested in going to NASA, and mostly just walkign around or going to the beach at other ports. will the nasa trip book up? we're interested in the regular package, not the "up close". thanks.
