Deep sea fishing in Belize

My wife and I are taking the Caribbean Princess out of Galveston Texas on January 18th. My question is has anybody fished out of Belize city or taken the short 15 minute flight to San Pedro for better deep sea fishing?? The fishing outfit in San Pedro tells me there is plenty of time to fly round trip, fish 4 hours and get back to the cruise ship in time for sail away. Any suggestions would be appreciated especially from fisherman that have done the trip already.

Any tips you have to share about snorkeling fishing beaching hiking at any ports appreciated.

I heard they need to drive quite a bit north for good fishing...maybe that takes too much time and for this reason it is rarely listed?
