We have a JR suite on Freedom of the sea this October ( first aft cabin ) from what I have read there's a coffee maker in our room, Can we bring our own special coffee to make ?

It is a small coffee maker using the individual drip coffee packets. Makes one cup at a time.

This was the coffee maker we had in our JS on Brilliance a couple of months ago. It's a regular drip machine that makes individual cups. They provide the individual coffee pods, in our case it was Seattle's Best.

 

You might, and I stress MIGHT, be able to rig up a regular filter and put in your own coffee. You'd probably do better to find those single use coffee pods from whatever brand you like. They are the round, puck shaped type:
