Depends on the cruise, but on an Alaskan sailing when we sailed at 11:00 p.m. the dining room was open seating for the first night.

I agree with bdjam that it probably depends on the cruise and departure time. As I remember, we had 2 seatings on the Coral in December (we had the late seating). In Alaska, we had open seating the first night on the Summit.
