Some people like to have everything planned out in advance; some people prefer to wing it. You can wait until you are on board, but keep in mind that everyone else on board is "competing" with you for the same seats, so the longer you wait, the fewer choices you will have. Lots of people think that "Freestyle" means they don't have to do any planning and they expect the entire ship to be available to them at a moment's notice. Nobody ever promised that. In fact, Freestyle means it's a free for all and you need to grab a spot for yourself before they're all gone. The larger ships (Epic, *Away, Escape) seem to require more advance planning due to the greater number of people. I was on Epic in November and Le Bistro, Teppanyaki and Cagney's were constantly booked up. Moderno and La Cucina you could take a risk on showing up at the time you wanted. You do have the ability to change reservations once on board if something in the schedule changes, and I found they were quite flexible about that.
