Dinner & Show Reservations ?

It depends how flexible/adaptable you are. Some people like to have everything planned out in advance; some people prefer to wing it. You can wait until you are on board, but keep in mind that everyone else on board is "competing" with you for the same seats, so the longer you wait, the fewer choices you will have. Lots of people think that "Freestyle" means they don't have to do any planning and they expect the entire ship to be available to them at a moment's notice. Nobody ever promised that. In fact, Freestyle means it's a free for all and you need to grab a spot for yourself before they're all gone.

100 days ahead in Suites, 90 days in other cabins.

I was on Epic in November and Le Bistro, Teppanyaki and Cagney's were constantly booked up. Moderno and La Cucina you could take a risk on showing up at the time you wanted.

You do have the ability to change reservations once on board if something in the schedule changes, and I found they were quite flexible about that.

The entertainment shows you could mostly book the same day without difficulty, except for Cirque which is worth booking ahead.
