The one tip I can offer is what we do at our house: one person is responsible for putting the docs, tickets, passports etc in the bag and the other is responsible for verifying that they are there before we leave the house. It's a double check, and also shared blame if anything is left behind ;)

Might want to bring a debit card (or bank card). Since you will be in NY you can get US cash out of any ATM machine for a small fee and save on the conversion costs and get better exchange rate. This is what we do when traveling to Europe.
