Grand Cayman website states they are GMT-5, which is exactly the same as Eastern Standard Time. So if it's noon in Miami, it should be noon in GC. (at least from November thru March) Riiiiight?? Right...it only changes with daylight savings time.... It is Cozumel and Costa Maya and Belize and Roatan that are on Central Time! Until daylight savings again....
