Flight time from MIA after debarkation

From our experience when the ship was just over half full, yes. Disembarking was a breeze and you just walk off when ready, no line, and head to customs where there was a tiny line.  The airport is about 20-30 min away, traffic dependent.  If your flight is 10:55 wheels up, then figure you should get to the airport by 9, so plan for an 8ish disembark after grabbing a quick bite to eat.

For those who have cruised on Scarlet Lady recently.... do you think it's possible to make a flight at 10:55 from Miami when you depart the ship?

That shouldn't be a problem as long as you disembark by 8pm.  I disembarked at 9 for my 11:55 flight.  The issue isn't with getting the Airport on time, it's the Airport itself.  Check-in and security lines were insane.  Depending on what do of the week and what Arline it could easily take over an hour and a half if you have checked bags.  Disembarking was extremly quick.  I self disembarked and I was from ship to Uber in less than 10 minutes.
