Western Caribbean excursions

Hello everyone!

The last time I posted on this forum was to announce our cancellation of our August Splendor cruise from London to Copenhagen due to my contracting Covid. What a disappointment! With the proper documentation, Regent was great about the future cruise credit so we are about to try again to finally board the Splendor on 12/13. I was wondering if anyone could offer some wisdom regarding the four main ports we’ll visit: Roatan, Harvest Caye, Cozumel and Costa Maya. I’ve tentatively booked some of the excursions and I know everyone’s preferences are different but I’m really flying blind here and would love to hear about some really good (or awful) experiences. I’m also leaning toward taking the cooking class, New World Mediterranean. Has anyone taken this class? Thank you all in advance for your advice.
