If you are a US citizen on a closed loop cruise out of the United States to the Caribbean, you need a passport or your birth certificate. You do not need to provide documents in any port when you get off the ship. if you do not have appropriate travel documents, you will not be permitted aboard at all. if you are not a US citizen, you may need a visa. To answer my own question in case anyone else wants to know - you can get your passport stamped at the cruise terminal which is full of shops - but there is a large waiting area and the immigration office is over in the corner. Have your passport with you, knock on the door, and ask the immigration officer very nicely if it's possible to get a souvenir stamp for your passport. We were able to get ours (fwiw, these are actual official passport stamps - but we were advised to specify "souvenir" by guest services on our ship so the immigration officer would know why we were asking and to avoid any confusion).
