weather in Japan and HK in the beginning of December?

I'm not sure about Hong Kong, but Japan gets a very definite winter season according to our 'adopted' Japanese son. He says Tokyo is similar to San Francisco in the winter, cold and damp, and the further north you go, the more bitter the weather becomes. Our friends in Wakayama hated winter there, it came about the middle of November and lasted until March with frigid winds and snow. They, of course, might be prejudice since they live in Florida now and previously to their Japan stay.

 

In short, take warm clothes!

Japan:

Depends on which part of Japan we are talking about.

The southern islands down to Okinawa have a climate very similar to Hawaii.

Further North, Osaka is more like a San Francisco or central California Climate. Tokyo is a bit more like New York or Washington DC. Tokyo usually sees a little bit bit of snow around Christmas.

Further North, around Niigata or Aomori, you are looking at upstate New York or Michigan weather.

Farthest North, Hokkaido has weather very similar to Northern Minnesota and Canada.

Hong Kong in December is usually quite comfortable and cool. Temperatures in the 60's and 70's F. On very rare occasions they can see a bit of snow on Victoria Peak.
