Tell us a bit more about what you're interested in and we may be able to recommend something specific... snorkel, beach, ATVs, culture, history, ecology...? What is the best excursion to take?"Best" is subjective. What might be best for me might (probably) won't be best for YOU. You have to give more information about you and what your interests might be so people can give appropriate recommendations. I'd recommend scuba diving in Cozumel if you are certified. Do a Discover Scuba dive if you are not certified. Get the Cozumel map from http://www.cancunmap.com then rent a car (NOT a jeep) and drive around the island.
