Booking excursions through Carnival questions

I am looking at the carnival site regarding excursions; I know what we want to do and have emailed some private companies as well but don't want to get shut out. My question is, if I book the excursions through carnival and decide to do something else instead, will they credit my account or am I out the money? Obviously we would be telling them ahead of time. Would we better to simply wait and book when we board? Just wondering how this works?

if there's something you really want to do, its best to book in advance. i like to book ahead to spread out the expenses.
