Coral sightseeing

We are looking for a tour in Grand Cayman where we can see a lot of coral and tropical fish. We want to see under water life without snorkeling. Does anybody have any tour recommendations? We are looking at the semi sub excursions as well. There are two; Atlantis goes 100 ft below water and Nautilus doesn't give a depth. Also, what about just seeing the water life and not doing a sub tour? Any info is appreciated. We will be on the Star Princess in November.
