Curious about post-cruise excursions out of Miami...

Our flight times have changed, so now our flight home isn't leaving MIA until 6:30 p.m.:rolleyes:

 

Debating between getting a day room at the Hilton-MIA or doing a post-cruise excursion.

 

I was wondering if anyone had done the Everglades or Miami Seaquarium excursions through Carnival? I also wondered what the procedure was for debarking then...do you meet somewhere, luggage in hand, then are escorted off the ship to your excursion? Or do you have to debark and THEN meet up for your excursion? Also wondered if being tired factored into your day at all? We don't know if we're gonna feel like putzing around after being on a week long trip.
