Cozumel and Grand Cayman - Port Activities

We will be on the Magic in March and are looking for suggestions for port activities or excursions for Cozumel and Grand Cayman. Our son will be 7 and most of the excursions in Cozumel seem to take the entire day leaving little or no time for shopping and exploring Cozumel. Any suggestions??

 

We are thinking about renting a car in Grand Cayman. Has anyone done this and are there any issues we should know about?:confused:
