O.K. to Beach This week ?

We leave this week Weds. for Mexican Riviera on NCL Star. We have procrastinated booking excursions and now it's time to make up our minds. Does anyone know if it (the air temperature and/or the water) is too cold to plan beach days in January? Somewhere I read that a person could only stand the water for 5 minutes in Acapulco due to cold water. Any help or recommendations would be greatly appreciated!
