Paying private tour operators in advance??

Are there any private operators that let you pay by CC in advance? My DH is a major, anal planner & wants to have everything set up and paid for in advance, before we leave on our cruise. I'm having problems finding someone who'll do this for me. It seems like most of them just use your credit card to hold the reservation, and then you pay cash when you arrive. I understand that they don't want the hassle of refunding, in case you don't make the port, but I'm willing to take the chance!

Grand Cayman is one of the islands that there's a chance that you won't be able to tender to because of weather. I do understand wanting to do things in advance, but I'd not pay for a tour in advance for GC. :)
