I am printing off my documents right now. Do I need to print one for each person or one per room? Do I need page 5 for each person or just for each room? Does anyone know the answer to this?

You only need one copy. In the e-docs you will find the names of each passenger that is assigned to the cabin.

That being said, it can never hurt to make another copy to replace the one I always lose. ;)

The only reason you may want another print out of the S&S page is if someone is going to have their own account.

Isn't it easier to save the doc file (pdf) to your computer and just print the pages you need?

Which would be just S&S form and luggage tags, right?

Make sure you print enough luggage tags for all your luggage. I laminated mine so they are sturdier.
