Diamond/Sapphire vs Island/Coral, anything obvious?

Getting ready to book another cruise to Alaska, this time we are going to take our young adult kids and will have to travel during summer due to college schedules. I just returned from the Island on 9/10 and I really think they might be bored on that ship. However, we did travel in September so no kids or young adults on ship. I was thinking maybe the Diamond or Sapphire might have a little more to offer young adults since I really want to cruise with Princess. Any feedback on your experience with the Diamond or Sapphire and the difference you might of noticed between Diamond/Sapphire vs Coral/Island? Thank you in advance.
