Activites for family with 2 year old?

We'll be on the Voyager, traveling with a 2 year old. I was hoping to get some recommendations for excursions from everyone. I would like to go to an all inclusive resort, so that we can hang out at the beach. How far are places from the dock? We will not have a car seat, so I am concerned about traveling with my child in a cab or bus.

I will be traveling with 5 and 3 year old. I wanted to do a Dolphin encounter. Carnival has an age limit of 7 or 8, I think, anyway, nothing for 3 and 5 year olds with Dolphins. So at Chaakanab(sp), they offer a Dolphin encounter, children 1-5 are free with paid adult.

 

I just booked it, so for $150, we spend 45 minutes with dolphins, the kids can touch and kiss th dolphin, plus that park looks amazing.
