You eat at the same table with same waiter and assistant waiter every night. You tip them both separately and yes you can always give more than the standard - our wait staff was excellent. They keep the tips you give them. Tips are normally provided at the end of the cruise. We use pre paid vouchers in envelopes which you can sign up for, and give extra for exceptional service.
