Does anyone know if NCL Pearl (or others) does anything special for Father's Day? Or any other (insert title here) Day?

For Mother's Day - a card and carnation were left on the bed at turndown. This was on the Star a couple of years ago.

Yes.

They allow fathers to look under the ship's hood, grunt, then wack the engines with a wrench to "fix" it. They are encouraged to unbutton their pants upon completion of their dinner and stick their hand down their pants.

Seriuosly, I am unaware of what, if anything the do, but am confident one of my fellow NCL experts will be able to assist.
