I am something of a history buff and I am wondering if there are tours geared towards seeing the former plantation houses and older churches as opposed to others that head directly to the beach and shopping areas. This will give you a good overview of the island as well as seeing several historic places. If you can take an early tour and then once back at the ship you could actually take a walking tour of Bridgetown (either guided or on your own) and see the Barbados Synagogue, the oldest one in the western hemisphere, as well as St. Michaels Cathedral and the Parliment buildings.
