I may use that one,but the one from RCI had a few different ingredients like cranberry juice.. Watermelon Gazpacho Serves 8 1 cup peeled, seeded and thinly sliced cucumber 1/4 tsp kosher salt 6 cups cubed seedless watermelon 1/2 cup cranberry juice cocktail 1 red bell pepper, cored, seeded and finely chopped 1 medium red onion, finely chopped 1 stalk celery, finely chopped 1/4 cup minced fresh Italian parsley 2 to 3 Tbs fresh lime juice 1 Tbs sherry vinegar 8 fresh mint leaves, for garnish 1. In a small bowl, toss the cucumber with the salt and set aside. 2. In a food processor or blender, combine the watermelon and cranberry juice. Pulse briefly until just blended (do not over process or the juice will become frothy and pale). Strain the mixture through a fine sieve over a nonreactive bowl, pushing down on the solids to extract as much of the liquid as you can, leaving the pulp behind. 3. Stir in the bell pepper, onion, celery, parsley, lime juice, and vinegar. Cover and refrigerate for 1 hour to let the flavors blend. 4. To serve, rinse the cucumber and pat dry with paper towels. Divide the soup among chilled soup bowls and garnish with the cucumber and mint leaves.
