I assume you are flying into Newark...That being said, I suggest staying in an airport hotel. Bayonne is not a great area-You'll get better services (taxis restaurants, etc) if you stay near your airport. If you'r coming into NYC however, it may be fun to stay in Manhatten overnight ant take a car service or a cab to bayonne.

Some folks like the motels in Elizabeth. I've stayed at the Newark Airport Sheraton for a Park/fly before we stopped flying and was very satisfied with the hotel and the parking arrangement.

 

Folks stay in a whole variety of different places depending on their budget and their pre and post cruise plans. Give us some more details about your plans and we can make better suggestions.
