Cruise with brother, need suggestions...

My brother and I are 10 years apart, and he is always jealous that he never gets to go anywhere, so I've decided to take him on a cruise. Just me and him. The only problem is that he gets impatient very easy and complains a lot. He was super excited to go to Six Flags over GA, but complained the whole time about heat and long lines. I can't do much about hi complaining, but I want to make this as fun as possible for him.

That being said, there is no way we are just going to wander around the beaches and shops. I will have have one very unhappy 12 yr old. He fancies himself a thrill seeker, but I'm a little skeptical about that too, but I don't want to rule out the thrill factor.

We're booked on the Carnival Fantasy leaving from New Orleans in Feb 09, to Cozumel and Progresso (I'll post this there as well). I just need advice on excursions. I want to pre book everything. It's our first cruise and I'm not very good at watching the clock, so we are taking no chances. I want to know YOUR favorite excursions for these ports (especially if you traveled with a 12 yr old boy)

Thanks in advance for the info.
