I am looking for the white chocolate mousse recipe that they usually serve on the first night. The picture with the recipe shows a white mousse, although the recipe has cocoa in it. Hope it's what you're looking for. Enjoy! Chris (who never met a cookbook she didn't like :) ) MELBOURNE VELVET MOUSSE 1 tsp unflavored gelatin 1 Tbs cold water 2 Tbs boiling water 1/2 cup granulated sugar 1/4 cup unsweetened cocoa powder 1 cup whipping cream 1 tsp pure vanilla extract chocolate shavings, for garnish 1. In a small bowl, sprinkle the gelatin over the cold water and let stand for 1 minute. Add the boiling water and stir until the gelatin is dissolved. 2. In a mixing bowl, combine the sugar, cocoa powder, whipping cream, and vanilla. With an electric mixer, beat on medium speed until the mixture is stiff, stopping 2 or 3 times to scrape down the sides of the bowl. 3. Add the gelatin mixture and beat until well blended. Spoon into dessert dishes or champagne glasses. Sprinkle with shaved chocolate. Chill, covered, for at least 1 hour before serving. Makes 4 servings.
