Costa Rica - wait to get there excursions?

I will be on my first cruise, Celebrity Constellation, stopping in Puerto Limon on March 23. I am not really thrilled by any of the ship sponsored excursions, but I hear many tour operators meet the boats and we can pick up a trip when we arrive. This is very contrary to my usual, plan ahead way to travel. Is there anyone who has done this and can recommend a particular tour operator at the port? We are not interested in a zip line, arial tram or a lot of time in a bus/van/car. We are quite fit and would like to hike and possibly do a boat tour. Any suggestions would be appreciated.

The only caution I have is keep in mind that many of the excursions are far from the port and although Costa Rica is beautiful, the road conditions are bad in many parts of Costa Rica (almost as bad as the road conditions in Chicago right now)! I have done both private and ship sponsored exucrsion in the past, but in Costa Rica I personally would not opt for a private excursion unless I allowed lots of extra time built in as a cushion in case a problem came up on the return trip to the ship.
