Never had to do this before but plan to request a table for two on the upcoming trip.

When you board the ship, grab a capers. You'll see what time he will be available and where to request changes for dining.

It'll say in the Capers, but it's usually about 1:00 or 1:30 at the main dining room (one closest to the atrium has been my experience).
