I believe the ship time is one hour behind Puerto Vallarata time.

We're on the 7/12 Mariner Mexican Riviera sailing, and there are a couple of good threads about the time change over on the Mexican Riviera section of the Ports of Call Boards. Check them out. Evidently there are 2 time zones involved, and you need to pay attention to shore excursion booking times in PV. We had originally booked a 9:30 a.m. zipline tour, but had them move it down an hour; PV time will be one hour ahead of ship's time. Don't take my word for it though -- go check those threads!;)
