Tours in St Lucia - customized/shorter?

We are trying to decide what to do on our day in St Lucia (in port from 8am - 5pm).

 

Thinking about ziplining - but I don't want to miss out on at least seeing the Pitons and other "must-do". I'm not sure the full day island tours are really for us - already have a full day tour in Dominica and with a port every day - not sure I'll hold up for this.

 

I was thinking either ziplining with lunch over the Pitons or stopping at the beach between the Pitons - but worried that this may be too much driving or just not possible to do

 

Or maybe a snorkel tour cruising by the Pitons - this seems like a long trip everywhere.

 

Would also like to try some of the fresh bread I've heard talk about.

 

Anyone that has done the volcano/waterfall - how long are you actually there and how long does it take to get there - did you think it was worth it? How do the waterfalls compare to Dominica?
