How much do you have to put down to book...?

I ALWAYS book my cruises atleast a year out, with the standard $250 pp and then pay a bit til final payment. A friend of mine is considering joining our sailing, but won't know one way or the other til next month, which is a month prior to final payment being due. When she books, does she now only have the month to pay off the cruise balance?

Yeah, she'll have the same final payment date as you.
