Would you dive at Grand Cayman or Cozumel if given the choice?

If you could choose, which island would you dive at. I've done both, but they were long ago and so my memory is a big foggy. I will be diving with a good amount of uncertified divers so we'd need a dive shop that can accomodate both sets of people.

DH and I dove in both GC and Coz last year on our Mariner cruise. We dove in Coz this year and will dive in Coz next year but will swim with the stingrays in GC. We much preferred our dives in Coz compared to GC.

Discover Scuba? I'd go with Grand Cayman because of the lack of current.

That will depend of the weather conditions the day you are there. Wind/waves can stir up the water leading to lower visibility. Conditions change seasonally and daily.
