Palermo Sicily Tour to Wine Country?

Anybody done an Independent Tour West to Wine Country from Palermo Pier? Viatour has one, but our Port time is only 7/hrs. Is this do-able?? Otherwise I will do a Palermo street-food walking Tour. All thoughts appreciated. Locomotiveman Tom
