We are cruising on the Spirit in January and I have been going over our online check in. We cruised this past January on the Dawn out of New Orleans and I was able to pick an arrival time. However this coming cruise out if Barcelona I don't see that we have that option. Does anyone know anything about that? Can we pick an arrival time or no? Thanks in advance

As others have said it is dependent on what time your ship comes in.
It also depends on what itinerary you have been on.
If you are doing the Epic all EU ports customs and immigration will seem extremely laxed due to the fact you are still in the Schengen area and you will probably not be asked for your passport or any thing else for that matter. As Schengen agreement includes the free movement of people among other things.
If you call at a port or start your cruise outside of the Schengen area expect customs and immigration to be beefed up when calling at your next Schengen port of call or at Barcelona.
We are doing the Canary Islands and Morocco with round trip to Barcelona.

How early can you get off the ship on disembarking day? Ship arrived in port for the final day of cruise at 5am. We want to schedule a tour. So just wondering on how early we can get off

There are several threads about this. Agreement seems to be that since you do not know your stewards likes, allergies, etc the best gift is extra cash.

We have been fortunate on previous cruises to have exceptional cabin stewards. I was reading in a book with tips for cruising and the author mentioned having a small gift (chocolates or the like) to give to the cabin steward. We already tip extra. I know these employees work really hard to make us comfortable and they don't get paid all that well. Any thoughts on this?

It should be fine. It's a side street, not on the main drag. Just be alert where ever you are and you should not have any issues.

We brought water bottles with us that we got from the dollar store. We filled them with ice and water at the buffet. It was very good. There is usually lemon slices available too!

After 3 cruises out of Boston on the DAWN, I have cruised the DAWN out of NOLA 3 times, and once again from Boston. Can you tell I love the DAWN?
We have cruised the Dawn out of NOLA and we loved it too! Now it's been refurbished so it's probably even better!

We were on the Dawn the 3rd of January 2016 for a week. There weren't any decorations. I don't know if they were already taken down or what. But just a tad disappointed
