Are men wearing sports coats with or without ties, suits, or just nice slacks and dress shirts, to the formal dinner nights on Princess cruise ships?

Curious, if men are bringing suits, or just a sports coat, or skipping both and just wearing nice slacks and dress shirts for dinner?

When I dine at one of the ship's specialty restaurants, do I tip the waiters and other waitstaff? Is a gratuity part of the additional fee I pay for dining there? I do not want to "stiff" the waitstaff but also want to be correct in my dining.

Will have just 1 day in Lisbon on our own (4 adults) before the ship's per-arranged tours take us to Belem and Sintra; so looking for a tour guide who can take us around Lisbon neighborhoods for an overview. Do not want a "canned" tour as we do not want to see churches or museums and need someone who is willing to work with us on a 4 or 5 hour tour customized for just us and can pick up/drop off at our hotel.
