3rd Party off shore excursion companies....Must do's while in Ports

Thank you both!! On another note are any of the following ports a port that you would suggest an excursion that is a " Must Do:? from your experiences?.. and yes we do have a bunch of drinkers... and finally did you do tours on your own without a tour guide and were they within walking distance or a short taxi drive...thank you for your input and suggestions... -
Good evening to all we are going on our first VV aboard the Valiant Lady for the "Ships Ahoy" New Year's sailing leaves Miami on 12/30 and has it's port days at Puerto Plata, San Juan, Puerto Rico, St. Croix and the beach club at Bimini....please give us your experiences we are a group of 10 celebrating 2 milestone birthdays during this cruise!
