It’s not necessarily 60 days. Right now for the Transatlantic cruise which is in 57 days - restaurant bookings open on 8 March. and they ALWAYS hold back tables and release slowly as it gets closer - and people cancel, don’t show up .. and there are plenty of locations to choose from
